Orange & fig Cookies
My daughter has been begging me to help her make these fig and orange cookies so here is the recipe we used. Enjoy!
Orange & Fig Cookies
Ingredients:
½ lb (2 sticks) butter, room temp.
½ cup sugar (I use rapadura)
¼ cup brown sugar, packed
1 egg white(I saved the yolk to add to the batter) *
2 whole eggs, beaten
1 tsp. vanilla extract
2 ½ cups flour (I use einkorn)
2 tsp. baking powder
½ teaspoon salt
1 ½ cups minced dried figs (1/2 pound)
1 TB freshly grated orange peel
3 TB fresh orange juice
*If the egg white contains even a speck of yolk, it won’t whip properly
-Preheat oven to 350*F.
-In a large bowl, cream together the butter and sugars until smooth and fluffy. In a small bowl, beat egg white until soft peaks form. Add the whole eggs, leftover egg yolk, and vanilla to the creamed butter and mix well. Fold in the beaten egg white.
-In a separate bowl, sift together the flour, baking powder, and salt. Combine the wet and dry ingredients, then stir in the figs, orange peel, and orange juice.
-Drop the batter by well-rounded tablespoonfuls onto the baking sheets. Bake for 20 minutes, until the cookies are just slightly brown. Cool the cookies on a rack before storing in a sealed container. OR, keep them on the counter so you can eat them all throughout the day HA!
