Winter Beef & Root Vegetable Stew
A Cozy, Low-Effort Dinner for Cold Nights
There’s something magical about a pot of beef stew simmering away on a cold winter day. It’s the kind of meal that fills your whole house with warmth and makes you feel like you’re doing something good for your family… even though the slow cooker is doing most of the work for you.
This stew is one of my go-to winter dinners because it checks every box:

When the days get shorter, and it’s dark by 5pm, having meals like this ready to go is a game changer. You can come home, light a candle, kick your boots off, and let dinner take care of itself. And when you use high-quality beef—especially grass-fed, pasture-raised beef—you get a depth of flavor that turns “just stew” into something truly comforting.
(Slow Cooker or Instant Pot)
Ingredients:
2–3 lbs Grid Iron Hill beef stew meat or chuck roast (cubed)
4–5 carrots, chopped
2–3 potatoes, diced
1 onion, chopped
3 cloves garlic, minced
1–2 cups beef broth
2 tbsp tomato paste
1 tbsp Worcestershire or coconut aminos
Salt + pepper
1 tsp thyme
1 tsp rosemary
Slow Cooker Instructions:
Add all ingredients to the crockpot.
Cook 6–8 hours on low or 4 hours on high.
Shred slightly before serving.
Instant Pot Instructions:
Optional: sauté onions and garlic.
Add remaining ingredients.
Pressure cook 35 minutes, natural release 10 minutes.
Serve with sourdough, rice, or mashed potatoes.
Comfort in a bowl.
